Banana-Walnut French Toast (pg.40)
What You Need:
1 loaf Banana Walnut Bread (page 13)
1/2 cup milk
1 teaspoon vanilla extract
Butter or margarine
Cut loaf into 8 thick slices. Then cut each slice in half on an angle. Place slices in shallow dish. Beat eggs with milk and vanilla in bowl. Pour egg mixture over slices. Let stand until egg mixture is absorbed by bread slices.
Preheat griddle or large skillet. Fry bread slices in butter for 2 to 3 minutes on each side or until golden brown, turning once. Place on serving platter. Repeat with remaining slices. Sprinkle with confectioners' sugar.
Makes 8 servings
